  ALTHOUGH CLEANING OF EQUIPMENT WAS IMPROVED FROM THE PREVIOUS INSPECTION, A BUILDUP OF FOOD
  AND/OR STICKER RESIDUE ON SOME PANS, CONTAINERS, UTENSILS AND OTHER "CLEAN" EQUIPMENT WAS
  STILL OBSERVED. CLEAN ALL EQUIPMENT AS OFTEN AS NECESSARY TO MAINTAIN CLEAN TO SIGHT AND
  TOUCH.
   
  3717-1-04.5 Equipment, Utensils, and Linens:  Cleaning of  Equipment and Utensils
   
  (A)      Equipment, food-contact surfaces, nonfood-contact surfaces,  and utensils.
   
       (1)      Equipment food-contact surfaces and utensils shall be clean to sight and touch.
   
        (2) The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and
       other soil accumulations.
   
        (3) Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and
       other debris.

  REACH IN FREEZER IS STILL IN THE PROCESS OF BEING REPAIRED AND WAS NOT IN USE AT THE TIME OF
  THIS INSPECTION. THE PERSON IN CHARGE AGREED NOT TO USE IT UNTIL IT HAS BEEN REPAIRED.
   
  THE DAMAGED WALL IN THE DRY STORAGE ROOM HAS BEEN MUDDED. ONCE THE MUD DRIES IT WILL BE SANDED
  AND PAINTED.
   
  THIS INSPECTION IS A FOLLOW UP TO THE PREVIOUS INSPECTION ALL PREVIOUSLY CITED VIOLATIONS HAVE
  BEEN CORRECTED EXCEPT FOR THE ABOVE CITED VIOLATION. OVERALL, GOOD IMPROVEMENTS WERE MADE.
   
  A FOLLOW UP OF THE ABOVE CITED VIOLATION AND REPAIRS TO THE WALL AND FREEZER WILL BE CONDUCTED
  DURING THE NEXT REGULAR INSPECTION.
